Spring Pea Salad

ingredients

  • 1/2 cup fresh mint leaves, torn
  • 1 tablespoon capers
  • 1 shallot, sliced
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoono pepper
  • 1 pound peas, thawed if frozen
  • 1/2 cup crumbled goat cheese

directions

Combine the mint, capers, shallot, oil, salt and pepper. Add the peas and goat cheese and toss gently. Serve at room temperature.
