Spring Pea Salad
ingredients
- 1/2 cup fresh mint leaves, torn
- 1 tablespoon capers
- 1 shallot, sliced
- 1/4 cup olive oil
- 1/4 teaspoon salt
- 1/4 teaspoono pepper
- 1 pound peas, thawed if frozen
- 1/2 cup crumbled goat cheese
directions
Combine the mint, capers, shallot, oil, salt and pepper. Add the peas and goat cheese and toss gently. Serve at room temperature.
