Cranberry Apple Chutney

This goes great as an addition to poultry or pork.

ingredients

  • 4 cups fresh or frozen cranberries
  • 2 1/2 cups sugar
  • 6 whole cloves
  • 2 cinnamon sticks
  • 1 tsp. salt
  • 2 diced apples
  • 2 diced pears
  • 1 small diced onion
  • 1 cup golden raisins
  • 1/2 cup crystallized ginger

    In a deep 6 quart saucepan, combine the cranberries, sugar, cloves,cinnamon sticks, salt and 1 1/4 cups water. Stir frequently over medium heat to dissolve sugar. Cook till berries begin to pop open, about 10 minutes. Lower temp to simmer. Stir in apples, pears, onions, raisins, and ginger. Stirring frequently, cook till thickened, about 15 more minutes. Remove from heat and allow mixture to cool to room temperature. Remove any visible cloves or cinnamon sticks. Refrigerate in tightly sealed jars for up to 2 months.

    Makes about 8 cups, 4 pint size jars.
