Strawberry Skillet Cookies

Makes 20 to 30 large “strawberries”

No strawberries and not really a cookie, but it is made in a skillet!

ingredients

  • 4 tablespoons butter
  • 8 ounces chopped dates
  • 1/2 cup shredded coconut
  • 1/2 cup granulated sugar
  • 1 egg beaten
  • a dash of salt
  • 1 1/2 cups rice crispy cereal
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1/2 cup red sugar crystals for coating
  • 1/2 cup buttercream frosting dyed green (in a piping bag or spray can)
  • (You probably won’t use all the red sugar or green frosting, but just to be on the safe side ...)

Another traditional family Christmas treat. In my vegan years, I made these with high-quality margarine and left out the egg; it still works. Also for a less impressive simple sweet snack, you can just press the mixture into a pan and cut in squares.

    I can't get them to hold together, even after using 2 egg whites and a yolk instead of just one egg! Currently chilling in the freezer in hopes it binds, but I doubt it.
    I did slightly 'cook' the following ingredients together: my melted butter, the dates, coconut, sugar and eggs. But it felt right, since otherwise I was using a pretty much raw egg.
