Stuffed Chicken Parmesan
One of the fanciest foods that I make.It is defintely not a once a week kind of meal, as it takes a long time to make, and the ingredients are a bit pricey, but it is fun to have a special occasion recipe,and it is so yummy.
ingredients
- 6 chicken breasts
- 1/2 cup bread crumbs
- 1/4 cup grated parmesan cheese.
- 1 1/4 Tbsp oregano
- 4 ounces mozzarella
- 1 Tbsp prepared basil pesto
- 2-3 Tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 can tomato sauce
- 1/2 cup shredded mozzarella cheese
- 1 lb linguine cooked

Rinse Chicken;pat dry with paper towels and arrange on baking sheet. Cover with plastic wrap; freese chicken until they become firm,about 30 minutes.

In shallow dish combine bread crumbs, parmesan, and 1 tsp oregano. Slice partially through each chicken breast hortizontally to create a deep pocket. Place 2 slices mozzarella and 1/2 tsp basil pesto in each breast. Fold top of breast over stuffing, making certain that the cheese is covered. Dip each breast in bread crumb mixture. Reserve leftover crumbs.

Preheat oven to 350°. In large skillet heat olive oil over medium heat. Add chicken. Cook until lightly browned(about two minutes on each side).

Transfer chicken to greased casserole dish.Top with remaining oregano,salt and pepper.Pour tomato sauce over chicken;top with shredded mozzarella. Bake until chicken sauce is bubbly and chicken springs back when touched, about 20-25 minutes.

Meanwhile, transfer reserved bread crumbs to skillet.Toast bread crumbs until browned, about two minutes.

To serve,divide warm linguine among six plates.Transfer a chicken breast to each plate:spoon sauce from casserole dish over each serving. Sprinkle browned bread crumbs over linguine
