Mediterranean Chops
ingredients
- boneless pork chops
- flour
- 1/4 cup olive oil
- 1 1/2 cup onions/ sliced
- 1 cup golden raisins
- 2 T garlic
- 1/2 cup marsala
- 1 1/2 cups Roma tomatoes, seeded and chopped
- 1 cup chicken broth
- 1/4 cup white wine vinegar
- 2 T sugar
- 2 t dried oregano
- 1/2 cup pimento stuffed green olives
- 2 T capers, crushed
- 2 T chopped parsley
- 1 T lemon zest

Season chops with salt, pepper, and dust with flour.

Brown in oil 5 minutes per sids.

Add onions and saute 3 minutes, stir in raisins and garlic, and saute 1 minute.

Deglaze with Marsala, scraping up browned bits.

Stir in tomatoes, broth, vinegar, sugar, and oregano, bring to boil. Add chops, cover, reduce heat to med-low and simmer 10 minutes. Add olives and capers, simmer until heated through.
