Black Bean and Rice Salad
ingredients
- 2 14 1/2 oz. Cans of Chicken Broth
- 1/2 c. Water
- 1 lb. Long Grain Rice
- 2 Bay Leaves
- 2 15 oz. cans of Black Beans, drained and rinsed
- 2 Red Bell Peppers, diced
- 1 Green Bell Pepper, diced
- 1 Medium Red Onion, diced
- 1 Medium sized Bunch of Cilantro, chopped
- 1/2 c. Olive Oil
- 3 Tbsp Orange Juice
- 2 Tbsp. Red Wine Vinegar
- 2 tsp.Ground cumin
- 1 tsp.Chili Powder
directions
Cook rice in broth and water til absorbed.Transfer to a large bowl and fluff with a fork.Add the rest of the ingredients, and mix. Mix dressing ingredients together and pour over salad.
