Black Bean and Rice Salad

Makes 12 servings

ingredients

  • 2 14 1/2 oz. Cans of Chicken Broth
  • 1/2 c. Water
  • 1 lb. Long Grain Rice
  • 2 Bay Leaves
  • 2 15 oz. cans of Black Beans, drained and rinsed
  • 2 Red Bell Peppers, diced
  • 1 Green Bell Pepper, diced
  • 1 Medium Red Onion, diced
  • 1 Medium sized Bunch of Cilantro, chopped
Dressing
  • 1/2 c. Olive Oil
  • 3 Tbsp Orange Juice
  • 2 Tbsp. Red Wine Vinegar
  • 2 tsp.Ground cumin
  • 1 tsp.Chili Powder

directions

Cook rice in broth and water til absorbed.Transfer to a large bowl and fluff with a fork.Add the rest of the ingredients, and mix. Mix dressing ingredients together and pour over salad.
