Seafood Casserole
ingredients
- 2 large eggplants, peeled and cut into 1-inch cubes
- water, enough to cover
- 2 tablespoons olive oil, or bacon drippings
- 1 cup chopped onion
- 1/2 cup fresh parsley
- 1/2 cup chopped green onions
- 2 lbs seafood, any combination of crab, shrimp, or fish.
- 1 tsp chopped garlic
- 3 large eggs
- 1 tbsp soy sauce
- salt and hot sauce to taste
directions
Preheat oven to 350. Over med-high heat in a large saucepan, parboil the eggplants in the water until soft, then drain and set aside. Heat the oil in the same saucepan over medium heat, then saute the onions, parsley, green onions until the onions are clear. Add the seafood and garlic, cover, and continue cooking for 10 minutes, stirring frequently. In a large mixing bowl, beat the eggs, then mix in the soy sauce, salt and hot sauce. Mix in the seafood with the eggplant. Put all in to a large greased casserole dish and bake for 1 hour.
