Pleasing Potato Pizza
ingredients
- Dough:
- 2 1/2-3 cups all-purpose flour
- 1 1/2 teaspoons sugar
- 2 teaspoons salt
- 1 package/1 Tablespoon Fleischmann’s instant yeast (I use quick rise)
- 1 cup very hot tap water (to touch, not boiling), divided
- 2 Tablespoons oil
- Topping:
- BBQ sauce - your favorite kind
- 6 large potatoes, peeled and cubed
- 1/2 cup milk
- 1 teaspoon salt
- 1 large onion, chopped
- 1/2 cup red pepper, chopped - optional
- 1 pound Farmer sausage - baked, drained and sliced thin - optional *recipe uses bacon, diced
- 1/2 cups cheddar cheese, shredded
- 1 1/2 cups mozzarella cheese, shredded

In a cereal bowl mix yeast, sugar and add 1/2 hot water. Set aside for 8-10 minutes. In the meantime, in a mixing bowl; mix flour, salt with a fork. Add the yeast mixture and mix. Then add the remaining water (1/2 cup hot water) and oil. Knead until smooth. Take dough out of bowl and spray inside of bowl with ’Pam’. Put dough back and cover with towel. Then place in a sink with warm water. Let stand for 10 minutes. Then roll out dough to fit into a large 12x17 cookie sheet (Costco size). Bake at 350° for 12-15 minutes or until lightly browned.

Spread BBQ sauce onto crust as desired.

Place potatoes in saucepan and cover with water. Bring to a boil; cook for 20-25 minutes or until tender. Drain potatoes and place into a mixing bowl. Mash with milk and salt until smooth. Spread over crust with sauce. Saute onion and pepper until tender. Drain and sprinkle over potatoes. If using farmer sausage layer on top of the vegetables, then top with cheeses. Bake at 375° for 20 minutes or until cheese is melted. Serve with sour cream if desired.
