St. Augustine's Spanish Salad
Goes well with crusty bread and a glass of Spanish white wine.
ingredients
- 1 head iceburg lettuce,chopped
- 1/4 lb. baked ham, julienned
- 1/4 lb. natural Swiss cheese, sliced into strips
- Handful of cherry tomatoes, chopped
- 1/4 cup green olives, halved
- save some olive juice
- 1 lemon
- Dressing:
- 2/3 cup Spanish extra virgin olive oil
- 1/3 cup white wine vinegar
- 1 tsp. fresh oregano
- 1 clove garlic, minced
- 1/4-1/2 cup grated fresh Romano cheese
directions
Whisk together salad dressing ingredients (except Romano cheese, reserving that for the end) in the bottom of wooden salad bowl. Place chopped iceburg lettuce in salad bowl with ham, Swiss cheese, tomatoes, green olives. Squeeze the juice of one lemon over salad. Toss. Slowly adding a little olive juice. Sprinkle with Romano cheese if desired. Serve.
