Peanut Dipping Sauce
I was first introduced to peanut sauce in a chinese restaurant in Montreal with my husband Brian and our good friends, Vern and Monica. They serve these tasty little pork dumplings smother in a sweet and savory peanut sauce. It has been 10 years since I have had them and still find myself craving them today! This sauce is also one I serve with fondue as well as beef or chicken satays. There are two versions - the basic Peanut Sauce and a spicier version with curry. Both are equally delicious in my opinion.
ingredients
Peanut Dipping Sauce- 1/3 cup smooth peanut butter
- 1 clove garlic, minced
- 2 tbsp fresh lime juice
- 1 tbsp low sodium soy sauce
- 1 tsp sugar
- 1/4 tsp cayenne pepper
- 1/3 cup water
- Add to above ingredients:
- 1/4 cup chopped peanuts
- 1 tbsp brown sugar
- 3 tsp red curry paste
- 6 tbsp water
- 1/4 cup scallions, finely chopped
- 3 cloves garlic, minced

In a small food processor, blend together peanut butter, garlic, lime juice, soy sauce, sugar, cayenne, water, salt and pepper.

**Slowly add water a little at a time and check for consistency.

For the curried version - add all of the remaining ingredients to the basic sauce and blend well.
