Panzanella
Great with steak and lamb
ingredients
- 4 c. Day old bread, 1" cubes (see note)
- 2 c. Small tomatoes, cut in 1/2
- 1/2 c. Red onion, julienned (see note)
- 4 c. Baby greens, (arugula or spinach)
- 1/2 c. Extra virgin olive oil
- 2 T. Red wine vinegar
- 12 Large basil leaves, torn
- Kosher salt
- Freshly ground black pepper
directions
1. Mix all ingredients in a bowl except salt and pepper. Adjust seasonings with salt and pepper and serve.
notes
1. Peasant/country bread (toast in pan with olive oil if needed); 2. Red onions in H2O for 10 minutes.
