Great with steak and lamb

ingredients

  • 4 c. Day old bread, 1" cubes (see note)
  • 2 c. Small tomatoes, cut in 1/2
  • 1/2 c. Red onion, julienned (see note)
  • 4 c. Baby greens, (arugula or spinach)
  • 1/2 c. Extra virgin olive oil
  • 2 T. Red wine vinegar
  • 12 Large basil leaves, torn
  • Kosher salt
  • Freshly ground black pepper

directions

1. Mix all ingredients in a bowl except salt and pepper. Adjust seasonings with salt and pepper and serve.

notes

1. Peasant/country bread (toast in pan with olive oil if needed); 2. Red onions in H2O for 10 minutes.
