Green-Apple & Soy Bean Salad with Wasabi Vinaigrette

ingredients

  • Salad
  • 1 c. Granny Smith apple, diced
  • 1 c. Soy beans
  • 1/2 c. Scallions, chopped
  • 1 c. asparagus, sliced and blanched
  • 1 c. Snap peas, sliced and blanched
  • 1 c. Celery, diced
  • 1/2 c. Cucumber, diced
  • Kosher salt
  • Freshly ground black pepper
  • Wasabi Vinaigrette:
  • 1/2 Shallot, minced
  • 2 T. Rice wine vinegar
  • 1/2 t. Wasabi paste
  • 6 T. Canola oil
