Organic Valencia Orange Salad w/ Shaved Red Onion, Feta & Champagne Vinaigrette
ingredients
- Champagne Vinaigrette:
- 2 oz. 100% olive oil
- 1 oz. Extra virgin olive oil
- 1 oz. Champagne vinegar
- 1 t. minced shallots
- Kosher salt
- Freshly ground black pepper
- Salad:
- 8 Organic Valencia oranges, peeled and sliced 1/4" thick
- 1 Red onion, small
- Kosher salt
- Freshly ground black pepper
- 2 T. Minced chives
- 1/2 c. Feta, crumbled
- 1/2 c. Pitted and chopped Moroccan black olives

1. Combine all vinaigrette ingredients in a jar with a tight-fitting lid. Shake well.

2. Arrange orange slices on four plates.

3. using a Japanese mandolin, shave some red onion slices very thinly over the oranges (you may use about 1/3 of the onion).

4. Spoon vinaigrette over oranges and onions.

5. Season with salt and pepper and sprinkle with chives.

6. Sprinkle with Feta and olives
