Captains Chicken
This dish is great served over rice.
ingredients
- 6-8 boneless,skinless,chicken breasts
- flour
- paprika
- salt and pepper
- 1 extra large sweet onion, chopped
- 1 clove garlic, chopped
- 1 large green pepper, chopped
- 1/2 cup butter
- Sauce
- 2 cans drained diced tomatoes
- 1 cup fresh parsley,chopped
- 4 tsp. vinegar
- 4 tsp. dry mustard or 4 Tbsp. mustard
- 2 Tbsp. Worcestershire
- 2 tsp. curry powder
- 2 tsp. thyme
- 2 tsp. salt
- 1 tsp. pepper
- 1 cup golden raisins
- 3 oz. slivered almonds, toasted

Roll chicken in flour, paprika, salt and pepper. Brown chicken in butter and place in a roaster or 3 1/2 quart casserole. Preheat oven to 300 degrees.

Prepare sauce as follows:

Fry onion,and green pepper in butter. Add drained tomatoes, parsley and all other ingredients except raisins and almonds. Cook slowly until well-blended. Pour over chicken. Cook slowly 1-1 1/2 hours in 300 degree oven. Add raisins 15 minutes before serving. Sprinkle with toasted almonds and serve over rice.
