Spinach,Roasted Red Pepper,and Corn Enchiladas
These are really easy and delicious!
ingredients
The Filling- 1 cup cottage cheese
- 1 10 oz. box frozen,chopped spinach thawed
- 1 tablespoon olive oil
- 1 medium onion minced
- 1/2 teaspoon ground cumin
- 1 1/2 cups frozen corn,thawed
- 1(7oz.)jar roasted red peppers,
- patted dryand diced
- 2 tablespoons grated parmesan cheese
- 1/4 teaspoon salt
- ground pepper to taste
- 1/2 teaspoon dried oregano
- butter for greasing dish
- 8(8-inch)flour tortillas
- 1 1/4 cups mild salsa
- 1/2 cup heavy cream
- 1/4 cup milk
- 1 1/4 cups grated monteray jack cheese
