Spinach,Roasted Red Pepper,and Corn Enchiladas

These are really easy and delicious!

ingredients

The Filling
  • 1 cup cottage cheese
  • 1 10 oz. box frozen,chopped spinach thawed
  • 1 tablespoon olive oil
  • 1 medium onion minced
  • 1/2 teaspoon ground cumin
  • 1 1/2 cups frozen corn,thawed
  • 1(7oz.)jar roasted red peppers,
  • patted dryand diced
  • 2 tablespoons grated parmesan cheese
  • 1/4 teaspoon salt
  • ground pepper to taste
  • 1/2 teaspoon dried oregano
  • butter for greasing dish
  • 8(8-inch)flour tortillas
The Sauce
  • 1 1/4 cups mild salsa
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • 1 1/4 cups grated monteray jack cheese

I usually make a little extra sauce because that's the way i like my enchiladas!
