Spiced Pumpkin Bread
A healthier alternative.
ingredients
- 1 cup sifted cake flour
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup firmly packed brown sugar
- 1 tsp. ground cinnamon
- 1/4 ground ginger
- 1/4 tsp. ground cloves
- 1 cup canned pumpkin
- 1/4 cup unsweetened applesauce
- 3 T. vegetable oil
- 1 egg, lightly beaten
- 1 tsp. vanilla extract
- Cooking spray
directions
Combine first 8 ingredients in a medium bowl; make a well in the center of mixture. Combine pumpkin and next 4 ingredients; add to flour mixture, stirring just until dry ingredients are moistened. Spoon batter into a 9 x 5 x 3 inch loaf pan coated with cooking spray. Bake at 350°F for 45 to 50 minutes or until a wooden pick inserted in center comes out clean. Cool in a pan on a wire rack 10 minutes; remove from pan, and let cool completely on wire rack.
