Vegetable Sandwich with Dill Sauce
ingredients
- 1/2 cup plain soy yogurt
- 3 T chopped fresh dill
- 1 1/2 tsp Dijon mustard
- 1 T cooking oil
- 1 tsp wine vinegar
- Salt
- Black pepper
- 8 thick slices of GF bread
- 8 lettuce leaves
- Few slices of vegan cheese
- 2 tomatoes, slices
- 1 cucumber, peeled and sliced thin
- 1 small red onion, sliced very thin
- 1 ripe avocado, sliced

In a small bowl, stir together the yogurt, dill, mustard, oil, vinegar, 1/4 tsp salt, and 1/8 tsp pepper.

Spread a T of the dill sauce on one side of each of 4 slices of bread. Top each slice with lettuce, cheese, tomatoes, a sprinkling of salt and pepper, the cucumber, onion, and avocado. Drizzle with another T of dill sauce over each sandwich and cover with the remaining four slices of bread.
