Chicken Cacciatore (Crc 26)
ingredients
- 1 each onion -- thinly sliced
- 2 1/2 lbs chicken, pieces
- 12 oz tomato paste
- 4 oz mushrooms, canned -- drained
- 1 tsp salt
- 1/4 tsp pepper
- 2 cloves garlic -- minced
- 2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp celery seed
- 1 each bay leaf
- 1/4 C water
directions
Place sliced onion in bottom of cooker. Add chicken pieces. Stir together tomato paste, mushrooms, salt, pepper, garlic, herbs and water. Pour over chicken. Cover and cook on Low 7 to 9 hours. (High: 3 to 4 hours.)
Serve chicken pieces over hot buttered spaghetti or vermicelli.
