Bean Soup (Mim Style)

ingredients

  • 2 C beans, navy
  • 2 quart water
  • 1 each ham bone
  • 1 each onion -- chopped
  • 1 C celery -- chopped
  • 3 each carrot -- diced
  • 1 quart tomatoes, stewed
  • 1 dash salt -- to taste
  • 1 dash pepper -- to taste

directions

1. Soak beans in water over night. 2. Simmer 2 hours or more until beans are tender. Add more liquid if necessary. 3. Remove meat from bones, chop and return to soup.
