Bean Soup (Mim Style)
ingredients
- 2 C beans, navy
- 2 quart water
- 1 each ham bone
- 1 each onion -- chopped
- 1 C celery -- chopped
- 3 each carrot -- diced
- 1 quart tomatoes, stewed
- 1 dash salt -- to taste
- 1 dash pepper -- to taste
directions
1. Soak beans in water over night. 2. Simmer 2 hours or more until beans are tender. Add more liquid if necessary. 3. Remove meat from bones, chop and return to soup.
