Lemony Pasta and Broccoli
This is a nice change from heavier cream based sauces. The lemon adds such a nice brightness to the dish. To make it an entree, add cubed, cooked chicken, or shrimp.
ingredients
- 1 pound pasta
- 2 heads broccoli, cut into floretes
- 2 cans Swanson beef broth
- 1 lemon
- 2 tablespoons Olive Oil
- 2 cloves garlic, finely chopped

Boil the pasta according to package directions.

While the pasta is cooking, bring the broth to a simmer in another pan, and add the florets. Simmer until they are tender.

In a saucepan, heat two tablespoons olive oil. Add the garlic, and saute for one minute. Squeeze the juice from the lemon over the garlic, and set aside.

Drain the pasta. Drain the broccoli, reserving the stock. Combine the broccoli with the pasta; add the olive oil, garlic, and lemon. Season to taste with fresh cracked black pepper and salt.
