Tuna & White Bean Salad
This salad is delicious with Rosemary Thyme Triscuits. Jacob would eat the whole batch when he was living with me.
ingredients
- 1 15 oz. can white beans, drained well
- 1 6 oz. can tuna, drained and flaked
- 1/4 red onion, finely chopped
- 2 - 3 sprigs rosemary, chopped
- 2 C arugula, finely chopped
- juice of 1 lemon
- 1 Tbs. olive oil (optional for drizzling)
- 1/4 tsp. salt
- 1/8 tsp. pepper

directions
Place 1/2 of the beans into a medium bowl. Mash the remaining beans with a fork in a small bowl. Combine mashed and whole beans with tuna, onion, rosemary and arugula. Dress the salad with lemon juice, olive oil, salt and pepper. Serve with crackers.
