Faux Filet Mignon
No one will guess that these tender “fillets” are made from inexpensive ground sirloin!
ingredients
- 8 oz sliced mushrooms
- 1 onion, coarsely chopped
- 4 Tbsp. butter or margarine
- 1 1/4 tsp. salt
- 2 lbs. ground sirloin
- 1 egg
- 2 Tbsp. + 1/2 tsp. chopped fresh parsley
- 1 Tbsp. Worcestershire sauce
- 1/4 tsp. pepper
- 8 slices bacon
- 2 Tbsp. all-purpose flour
- 1 cup low sodium beef broth
- 1/4 cup red wine

1. Preheat broiler. Coat broiler pan with oil. In food processor process 1 1/2 cup mushrooms with onion until finely minced. In non-stick skillet melt 2 Tbsp. butter over medium heat. Add mushroom mixture and 1/4 tsp. salt; cook, stirring occasionally, until soft, 6-8 minutes. Remove from heat; cool slightly.

2. Combine onion mixture, sirloin, egg, 2 Tbsp. parsley, Worcestershire, pepper and remaining salt. Shape into 8 patties.

3. Place on broiler pan. wrap 1 slice bacon around each; secure with toothpicks. Broil, turning once 6-7 minutes per side.

4. Whisk flour into broth. In clean skillet melt remaining butter over medium heat. Add remaining mushrooms; cook, stirring occasionally, until softened, 5 minutes. Add wine; cook 30 seconds. Add broth; cook, stirring, until thickened, 3-4 minutes. Arrange patties on platter; top with sauce. Sprinkle with parsley.
