Egg Fried Rice
This is from Gourmet magazine and one of Jill’s favorites.
ingredients
- 1 T. peanut oil
- 4 large eggs, lightly beaten
- 4 c. cold unsalted cooked white rice
- 3/4 t. salt
- 1/2 c. thinly sliced scallions
- 2 T. dark sesame oil
directions
Heat a wok or large deep skillet over high heat til hot and water dropped on the surface evaporated immediately. Add peanut oil and coat bottom of pan. When just smoking, add eggs and cook 30 seconds. Add rice and salt. Add greens and sesame oil and stir fry quickly to combine.
