Potato Leek Soup

this soup is a hearty and delicious fall/winter favorite.

servings:Makes 10 servings

  • 1 tablespoon olive oil
  • 2-3 large leeks, white part only, washed, cut into 1/2 inch pieces
  • 1 large onion, coarsely chopped
  • 1 large carrot sliced
  • several broccoli florets
  • 4 cups chicken broth
  • 2-3 medium russet potatoes cut into 1 inch pieces

    heat oil in large pot

  • 2

    sautee onion and leek

  • 3

    add carrots and broccoli. cook for 3 minutes

  • 4

    add broth and potatoes and bring to boil

  • 5

    reduce heat, cover, simmer 30 minutes

this can be made vegetarian by substituting vegetable broth for chicken.
