Potato Leek Soup
this soup is a hearty and delicious fall/winter favorite.
- 1 tablespoon olive oil
- 2-3 large leeks, white part only, washed, cut into 1/2 inch pieces
- 1 large onion, coarsely chopped
- 1 large carrot sliced
- several broccoli florets
- 4 cups chicken broth
- 2-3 medium russet potatoes cut into 1 inch pieces
this can be made vegetarian by substituting vegetable broth for chicken.
