Chicken and Rice Soup

ingredients

  • 1 med. onion, chopped
  • 1 large carrot, peeled and chopped
  • 1 T. veg. oil
  • 2 garlic cloves, minced
  • 2 c. shredded, cooked chicken
  • 1 c. uncooked white rice
  • 2 med. plum tomatoes, chopped
  • 1-2 T chopped pickled jalapeno slices
  • 1 t. cumin
  • 1/4 t. black pepper
  • 6 c. chicken broth
  • 1/4 c. loosely packed fresh cilantro, chopped
  • juice of one lime
  • 1 avocado, chopped (optional)

directions

    1. Saute onion, carrot and pepper in hot oil over medium heat, 7 min. Add minced garlic, and saute 1 min.

    2. Stir in chicken and next 5 ingredients. Stir in chicken broth. Bring to a boil, reduce heat, and simmer 20 min.

    3. Stir in cilantro and lime juice. Serve with chopped avocado.
