Grandma's Banana Bread
A recipe made famous by Grandma Pettit. I learned to cook this bread while living with Grandma & Grandpa on Long Island in the summer of 2001. A great way to make use of well-ripened bananas!
ingredients
- 1 3/4 cups sifted All-purpose flour
- 2 teaspoons Baking powder
- 1/4 teaspoon Baking soda
- 1/2 teaspoon salt
- 1/3 cup softened butter/margarine
- 2/3 cup granulated sugar
- 2 eggs, unbeaten
- 1 cup mashed ripe bananas (2 or 3)

Preheat oven to 325 degrees.

Grease a 9“x5”x3" loaf pan

Sift flour, baking powder, baking soda and salt together.

With an electric mixer at medium speed, or “cream” (or with a spoon) thoroughly mix butter/margarine with sugar, then with eggs, until very light and fluffy - about 4 minutes.

Then at low speed, or “blend” beat in flour mixture, alternatly with bananas just until smooth.

Turn mixture into greased pan and bake for 50 minutes, or until toothpick comes out clean.

Cool 10 minutes before removing from pan.

Cool overnight, and then slice and serve.
notes
**For banana nut bread - simply add 1/2 cup coarsely chopped brazil nuts or walnuts to the flour mixture.
