Grandma Jane's Oatmeal Cake

This was passed on from Grandma Keefer to Denise. Grandma said she never wrote down the recipe.

ingredients

  • Cake:
  • 2 and 2/3 cups water
  • 2 cups oats
  • 1 cup butter, softened
  • 2 cups brown sugar
  • 2 cups white sugar
  • 4 eggs, lightly beaten
  • 2 and 2/3 C flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • Icing:
  • 1/2 cup softened butter
  • 1 cup lght brown sugar
  • 2 cups shredded coconut
  • 1 cup chopped walnuts
  • 1 cup evaporated milk (regular, not sweetened)
  • a scant teaspoon vanilla

    Preheat the oven to 350°F / 175°C; grease and flour a deep 9“ by 12” cake pan.

    Mix all the cake ingredients by hand and pour into the pan. Bake for 55 minutes. Allow to halfway cool in the pan. Combine all the icing ingredients in a bowl and spread onto the cake, then brown it under the broiler (grill) for two minutes. Cool to room temperature before serving.

From Denise: I last made this about four years ago, but it was good. It seems too thin a batter at first, but it worked. I got the recipe in the early 1980s by writing down and measuring the ingredients she used when she was making it for Dad and me.
