Caribbean Chicken and Vege Soup
This is so yummy and a complete meal. I add all kinds of veges.
ingredients
- 2 tsp oil
- 2 diced onions
- 3 stalks diced celery
- 1 red or green diced pepper
- 8 c water
- 4 skinless boneless chicken breasts
- 3 diced carrots
- 1/2 c uncooked white rice or barley, rinsed
- 1 1/2 tsp salt
- 1/2 tsp ea:pepper, curry powder, chili powder, thyme
- 1 bay leaf
- parsley to garnish

Heat oil, add onions and celery. Cook til almost done, add pepper and cook til golden.

Combine water and chicken in a large pot.

Bring to a boil. Skim off fat.

Add sauteed veges, carrots, rice and seasoning.

Bring to a boil.

Lower heat and simmer covered 20 minutes/until chicken is cooked.

Remove chicken from pot and let cool.

Cut chicken into pieces.

Return chicken to pot and simmer 5 more minutes.

Adjust seasonings.

Freezes well.
