Southwest Mashed Sweet Potatoes
ingredients
- 5 or 6 medium sized sweet potatoes
- Water for boiling potatoes
- 1 C sour cream
- 1/2 C butter, softened
- 1 4 oz. can chopped green chilies
- 1 clove garlic, minced
- 3/4 t salt
- 1/2 t pepper
- 1 C shredded Mozzarella cheese

Peel potatoes and cut into 1 inch pieces.

Bring potatoes to boil in large pot. Boil approximately 12 minutes or until tender enough to mash.

Drain water from pot. Add sour cream, butter, green chilies, garlic, salt, pepper, and 3/4 C of shredded cheese.

Mash until smooth.

Sprinkle remaining cheese on top.

Serve immediately or refrigerate and warm in oven on 350 when ready to serve.
