Greek Easter Cookies

ingredients
- 1 pound unsalted butter
- 1 1/4 cups sugar
- 6 eggs
- 1 cup heavy cream
- 2 teaspoons vanilla
- 3 heaping teaspoons baking powder
- 8-10 cups flour
- 2 cups sesame seeds

Cream butter.

Add sugar and cream until smooth.

Beat 4 eggs until frothy or bubbly.

Beat eggs into creamed mixture until smooth.

Beat in heavy cream.

Stir in vanilla and baking powder. Beat to thoroughly blend.

Gradually stir in flour 2 cups at a time until dough is soft and pliable.

Knead dough for 10 minutes until smooth. Test if dough is ready for shaping (dough is ready if it doesn’t crack while shaping).

Keep unused dough covered as you work to prevent drying.

Take small pieces of dough and roll into a snake about 1/3 to 1/2 inch thick. Twist snake into double twisted shape.

Place twists 1 inch apart on parchment-lined cookie sheets.

Beat 2 eggs with 2 tablespoons of water. Brush cookies with egg wash.

Sprinkle generously with sesame seeds.

Bake cookies at 350 degrees for 10-15 minutes or until a light golden color.
