ingredients

  • 1 1/2 cups granulated sugar
  • 3 tbsp water
  • 5 eggs
  • 2 cans of evaporated milk (2x 285 ml)
  • 2 tsp vanilla extract
  • 1 tsp finely grated lime rind
  • pinch salt

    1. Preheat oven to 350 degree F (180 degrees C)

    2. tir together 3/4 cup sugar and water into saucepan. Cook over medium heat until boiling. Continue to cook, without stirring, until mixture turns to golden brown. Remove from heat and pour into 8 oven proof custard cups.

    3. Whisk together eggs, milk, vanilla, lime rind and salt. Pour into custard cups and place in a roasting pan. pour very hot water into until it is up to about one inch. Bake for 30 minutes or check with knife, and when the knife comes out clean. Place cups in refriderator for at least 2 hours.

    4. To serve, use knife to losen around edges and microwave for about 2-2 1/2 minutes.
