Ingredients

  • Cake:
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 3/4 firmly packed brown sugar
  • 2 eggs, separated
  • 1 tsp baking soda
  • 1/3 cup buttermilk
  • 2 cups all purpose flour
  • 1/2 tsp ground allspice
  • 3-4 ripe bananas, mashed
  • Vanilla Butter cream Frosting:
  • 2 1/4 cups butter, softened
  • 6 cups sifted powdered sugar
  • 3 Tbsp milk
  • 1 1/2 tsp vanilla extract
  • 3/4 tsp ground allspice

    Cream butter in a large mixing bowl; gradually add sugars, beating well at medium speed of an electric mixer. Add egg yolks, beating until blended.

    Dissolve soda in buttermilk. Combine flour, allspice; add to creamed mixture alternately with buttermilk mixture. Mix after each addition. Stir in mashed banana, and vanilla.

    Beat egg whites (at room temperature) in a medium bowl at high speed of an electric mixer until stiff but not dry. GENTLY fold into cake batter, one third at a time.

    Pour batter into 2 greased and floured 8 inch round cake pans. Bake at 350° for 30 minutes or until a knife comes out clean. Cool in pans for 10 minutes; remove from pans and let cool completely on wire racks.

    Frosting:

    Sift the powdered sugar & allspice. Cream butter at medium speed on an electric mixer; gradually add sugar, beating until light & fluffy. Add milk; beat until spreading consistency. Stir in vanilla.

    Frost bottom layer and sides. Add top layer and frost top and sides. Pipe frosting in a basket weave on the top. Garnish with almonds.
