Meringue Cookies
ingredients
- 2 eggs whites
- 1 pinch of salt
- 1/4 teaspoon cream of tartar
- 2/3 cup sugar
- 1/2 teaspoon vanilla
- 1/4 teaspoon almond extract
- 1 cup chopped pecans (optional)
- 1 1/2 cup mini chocolate chips

Preheat oven 350°

Lightly grease 2 cookie sheets or spray PAM lightly on parchment paper.

Beat egg whites until frothy, add salt & cream of tartar. After egg whites becom firm, gradually add sugar then vanilla and almond extract.

Do not hurry this process!!!!!

When mixture forms stiff peaks and looks shinny, stop beating. Fold in pecans and chocolate chips.

Drop bite size mounds onto cookie sheets.

Place in oven & turn OFF the heat.

Leave for 12 hours or overnight. DO NOT OPEN THE OVEN DOOR till morning.

Store cookies in an air-tight container.

make cookies small, large ones will break
