Ricotta Cheesecake
ingredients
- 1 lb. ricotta cheese (16 oz)
- 2 8oz packages cream cheese
- 1 1/2 cups sugar
- 4 eggs
- 1 tsp vanilla
- 1 tsp lemon juice
- 3 tbsp corn starch
- 3 tsp flour
- 1/4 lb unsalted butter
- 1 pt sour cream

1. Blend ricotta and cream cheese until smooth. Add all remainder of ingredients, except sour cream, until smooth.

2. Add sour cream, blend more.

3. Bake in greased spring pan. (10 in) 350 for 1 hour.

(leave in oven 30-60 minutes to cool)

-Serve at room temp; can make 1 day ahead
