Pasta Fasula
Simple healthy meal!
ingredients
- 1 large onion
- 2 cloves garlic
- 2 stalks celery
- 1/4 cup olive oil
- 1 cup dry white wine
- 1 28 oz. can diced tomato’s
- 1 12 oz. can chicken broth
- 1 can canelenni beans
- 1 lb. ditalini pasta (cooked al dente)
- 1/2 cup chopped fresh parsley
- parmesan cheese as final touch
directions
Chop onion,and celery. Mince garlic. Heat a dutch oven on med. heat, add olive oil, celery and onion. Saute until opaque. Add garlic, saute about 1 minute. Add dry white wine, simmer a few minutes, then add tomato’s and chicken broth. Simmer about 1/2 hour. Add beans, pasta and parsley, stir and serve. Top with parmesan cheese!

Great with a dry crusty bread and salad!
