Baked Chicken with Vegetables
ingredients
- 8 boneless, skinless chicken-breast halves
- 1/2 cup white flour
- 1 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 1/2 cups sliced onion
- 1 green pepper, sliced
- 2 cups sliced mushrooms
- 2 teaspoons oregano
- 10 cherry tomatoes or 3 whole tomatoes, sliced
directions
Preheat oven to 375 degrees F. Grease a shallow baking pan with margarine. Cut each chicken breast into four pieces. Coat chicken by shaking each piece in plastic bag with flour, salt, and pepper. Place chicken in baking pan and grind additional pepper over it. In a large skillet, sauté garlic and onion in oil until soft. Stir in green pepper, mushrooms, and oregano and cook for 1 minute. Add tomatoes. Pour vegetables over chicken and bake for 45 minutes or until chicken is fully cooked.
