ingredients

SALAD:
  • 2/3 c. wild rice (2 c. cooked)
  • 1 c. brown rice (3 c. cooked)
  • 1 lg. tart apple
  • 3 T. lemon juice
  • 1 bell pepper, diced
  • 1 c. diced celery
  • 1/2 c. minced red onion
  • 1/2 c. raisins or currants
  • 1/4 c. toasted almonds or walnuts
DRESSING:
  • 1/2 c. orange juice
  • 1 T. honey
  • 1 t. coriander
  • 1/2 t. cardamon
  • 1 T. veg oil

    Make the rice. Dice the apple and toss with lemon juice in large bowl. Add everything else and mix.

    Whisk dressing in a second bowl and stir it in.
