Texas Caviar
ingredients
- 1 (15.8 ounce) can black-eyed peas, drained
- 1/2 (14.5 ounce) can petite diced tomatoes, drained
- 1 fresh medium jalapeno, stemmed, seeded and minced
- 1/2 small onion, cut into small dice
- 1/4 yellow bell pepper, stemmed, seeded and cut into small dice
- 2 tablespoons chopped fresh cilantro
- 3 tablespoons red wine vinegar
- 3 tablespoons olive oil (not extra virgin)
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 3/4 teaspoon ground cumin

Mix everything together and refrigerate at least 2 hours.

You can leave it in the fridge for a couple of days and it will be fine.

The red wine vinegar, salt and pepper can be adjusted to taste.
