ingredients

  • 1 (15.8 ounce) can black-eyed peas, drained
  • 1/2 (14.5 ounce) can petite diced tomatoes, drained
  • 1 fresh medium jalapeno, stemmed, seeded and minced
  • 1/2 small onion, cut into small dice
  • 1/4 yellow bell pepper, stemmed, seeded and cut into small dice
  • 2 tablespoons chopped fresh cilantro
  • 3 tablespoons red wine vinegar
  • 3 tablespoons olive oil (not extra virgin)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon ground cumin

    Mix everything together and refrigerate at least 2 hours.

    You can leave it in the fridge for a couple of days and it will be fine.

  • 3

    The red wine vinegar, salt and pepper can be adjusted to taste.
