Pasta Primavera Casserole
ingredients
- 1 box (16 oz.) Ziti
- 2 medium zucchini, cut into strips
- 2 red peppers, cut into strips
- 2 cups sliced mushrooms
- 1 cup chopped scallions
- 1/3 cup butter
- 2 cups chopped tomatoes
- 1/2 cup flour
- 2 cups milk
- 2 cups chicken broth
- 1/2 tsp nutmeg
- 1/4 tsp pepper
- 2 pkgs. (10 oz. each) frozen chopped spinach, thawed and well drained

Cook pasta as directed; drain. Spoon into buttered 14 x 10 x 2-1/2-inch baking dish. Saute zucchini, red peppers, mushrooms and scallions in butter in large skillet for 3 or 4 minutes.

Add tomatoes. Salt to taste. Spoon over pasta.

Place flour in skillet; blend in milk. Add broth, nutmeg and pepper. Cook and stir over medium heat until mixture thickens; add spinach and pour over vegetables.

Cover; bake at 350 for 40 to 45 minutes.

Recipe may be halved; bake in a 2-quart baking dish for 20 to 25 minutes.
