Jambalaya
ingredients
- 1 Tbl. olive oil
- 1 large onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. paprika
- 1/2 tsp. dried oregano
- 1/2 tsp. dried thyme
- 1 bay leaf
- 1/4 tsp. cayenne pepper
- 1 Tbl. tomato paste
- 6 oz. smoked ham, diced
- 2 1/2 cups low-sodium chicken broth
- 14 1/2 oz. can diced tomatoes
- 1 cup uncooked long-grain white rice
- 1 lb. medium shrimp, peeled and deveined

Heat oil in a large Dutch oven over medium heat. Add onion, peppers, and garlic and saute about 10 minutes. Mix in salt, pepper, paprika, oregano, thyme, bay leaf, cayenne, tomato paste, ham, chicken broth, and diced tomatoes. Bring to a boil.

Stir in rice, cover, reduce heat, and simmer 20 minutes, or until rice is done and most of the liquid is absorbed.

Add shrimp and cook, covered, 5 minutes or until shrimp is cooked through. Season with salt and pepper.
