Aunt Peggy's Unstuffed Peppers
ingredients
- 1 green pepper chopped
- 1 -1 1/2 cups diced tomatoes
- 1 cup uncooked minute rice
- 1 cup mozzarella cheese
- 1/2 cup water
- 1 pound ground beef
- 1 small onion chooped

Brown beef, drain, add onion and green pepper.

Saute until tender.

Add diced tomatoes and water. Heat to boiling, add rice, simmer for 5 minutes covered. Salt and pepper to taste.

Top with cheese cover until melted.
