Zucchini Bread
This is the recipe my mother always uses, modified to be vegan.
ingredients
- 3 c. flour
- 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. vanilla
- 1 tsp. salt
- 2 c. zucchini, grated (approx. 2 zucchinis)
- 1 tsp. cinnamon
- 1 c. vegetable oil
- 2 c. dry sweetener
- 3 “eggs,” well beaten (EnerG, banana or applesauce equivalent)
- 1 c. chopped walnuts (optional)
