Zucchini Bread

This is the recipe my mother always uses, modified to be vegan.

ingredients

  • 3 c. flour
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 2 c. zucchini, grated (approx. 2 zucchinis)
  • 1 tsp. cinnamon
  • 1 c. vegetable oil
  • 2 c. dry sweetener
  • 3 “eggs,” well beaten (EnerG, banana or applesauce equivalent)
  • 1 c. chopped walnuts (optional)
