  • 2 Tbsp vegetable oil
  • 1 Tbsp Panang Curry Paste
  • 2 cloves garlic, minced
  • 1 & 1/2 lbs (681 g ) skinless boneless chicken breasts, cut in strips
  • 1 medium onion, cut into wedges
  • 1 medium red bell pepper, cut into strips
  • 1/4 lb (115 g ) mushrooms, sliced
  • 1/2 can Coconut Milk*
  • 2 Tbsp lime juice
  • 1 cup loosely packed fresh basil, coarsely chopped
  • black pepper, to taste
  • Lite Coconut Milk may be substituted
